When I know I’ll be too busy to prep a meal during the day, I make a veggie platter filled with gorgeous, fresh veggies from my farm box. Add some olives, hummus and vegan cheese and it’s a delicious and filling meal—really! Plus it’s an easy way to get in all your servings of vegetables.
